I have discovered a memang-jadi recipe book .. 1hari1resipi by hanieliza. simple instructions, and outcome is yummy. Modified this one. Supposed to be fried but i grilled it in the oven, 200 degrees for 30 mins. marinated with serai (3), halia (1in), b putih (3), serbuk kari (1 st), lada sulah (1 st), garam secukup rasa, serbuk cili (1 st), daun kari. Well, this being Ramadhan I don' t know how it tastes yet, but this came out fresh from the oven and looks very inviting!

muffin stew buns
Banana muffin (betty crocker – easy to do and nice esp when hot)
1/3 cup milk
¼ cup vegetable oil
1 large egg
2 cups all purpose flour (if use self-raising f, omit b powder and salt)
½ cup packed brown sugar
2 teaspoon baking powder
½ teaspoon salt
1 cup mashed very ripe banana (2 medium)
heat oven to 400
grease bottoms only of 12 medium muffin cups or line with paper baking cups
beat milk, oil, egg
stir flour, sugar, b powder, salt all at once just until flour is moistened (batter will be lumpy)
fold in bananas
divide into cups; sprinkle each with about 1 tablespoon topping.
bake 20 to 25 minutes or till golden brown
when done, immediately remove from pan to wire rack
streusel topping
¼ cup all purpose flour
¼ cup packed brown sugar
¼ teaspoon ground cinnamon
2 tablespoon firm butter or stick margarine
mix flour, brown sugar and cinnamon
cut in butter using pastry blender or crisscrossing 2 knives until crumbly
Chicken mushroom stew tarbus version
Made a simple and tasty chicken stew with the pressure cooker. Am better at it now - no need to add so much water, just enough to cover the meat.
tumis bawang (m + p)
add hard veggies (ie carrots, sweet potatoes - diced)
add chicken - i used one whole cut into 8
add mushrooms (i used oyster mushroom - if that is what it is called)
add bit of Mik's rempah kari udang cap tarbus (1/2 packet)
season with salt, pepper.
add enough water to cover
cook about 15 mins.
Buns
I used sweet bun recipe (hanieliza) to make these - one was with mushroom filling (i'm mushroom crazy now) and the other plain sprinkled with sesame seeds.
SWEET BUN Ingredient A : 500g high protein flour 25g milk powder 75g sugar 10g instant yeast 1 teaspoon bread softener 1 egg 1/2 teaspoon salt Ingredient B : 250ml water 75g margarine Method : 1. Mix well ingredients A. 2. Add in water and knead till a soft dough is formed.(I called upon my antique but still reliable mixer to help me with this process!) 3. Add in margarine and knead again till soft and elastic. 4. Divide the dough into 50g balls. 5. Shape the dough to your liking. 6. Leave to prove till double the size. 7. Bake in a preheated oven at 180 degree celcius till golden brown. 8. Once out of the oven, brush some margarine on top.

chicken pie
this was quite easy to do and nice to eat. i've translated it to malay - so that next time my helper can do it! infact she uli-ed and made the crust, so it's maid-teachable!
Chicken pie
Crust
400 g tepung gandum (ayak)
200 gram marjerin
secubit garam
7 – 8 sudu besar air sejuk (dari peti sejuk)
campurkan dengan hujung jari tepung + Margarin + garam – jadikan seperti serbuk roti. Tambah air sehingga adunan lembut
bahagi kepada 2 bahagian – biarkan sebentar kira kira 20 minit.
isi
400 gram isi ayam (potong dadu)
1 sudu besar butter
1 biji bawang besar (dadu)
35 gram tepung gandum
1 ½ cawan susu segar
2 sudu besar minyak masak
3 daun bawang
keju – 4 keping
panaskan minyak dan goring ayam. Biarkan ketepi.
Cairkan butter dan tumis bawang hingga lembut. Tambah tepung.
Tambah susu, sedikit sedikit. Kacau. Tutup api bila pekat.
Campurkan ayam, daun bawang, sayur campur, garam, lada putih, keju.
Panaskan oven 180 darjah.
Tepung – diuli leper. Letakkan ke dalam bekas (disapu marjerin dulu). Cucuk beberapa kali dengan garpu.
Bakar dalam oven – 20 minit.
Letakkan isi ke dalam bekas.
Tutup dengan adunan tepung. Buat potongan halus di permukaan.
Berus dengan telur yang telah dipukul.
Baker dalam oven 180 darjah – 40 hingga 45 minit.

Nasi hujan panas and ayam masak merah & cupcakes

this morning went on a cooking spree - Chef Wan's nasi hujan panas (resipi is too long - it's in the book 'sedapnya'.. malas nak type out now. But i tried the ayam masak merah (recipe Kak Mas who cooked and catered in Manchester)
then tried my hands at cupcakes (terkenang the cupcakes lala brought)... nampak sangat first attempt! but the cake tastes nice so recipe can be trusted.

Bahan-bahannya
250 gram mentega tanpa garam, dilembutkan
180 gram gula kastor (resipi asal menggunakan 250 gram gula tapi pada rasa saya terlalu manis dan saya kurangkan)
4 biji telur
185 gram tepung naik sendiri
60 gram tepung gandum
185 gram susu segar
Cara-caranya
1. Kedua dua jenis tepung diayak, letak tepi.
2. Pukul butter dan gula sampai gebu.
3. Masukkan telur satu persatu, pukul lagi.
4. Campurkan tepung dan susu segar berselangseli dengan adunan tadi.
5. Siapkan kertas cupcakes, bubuh adunan di dalam dan bakar pada suhu 180 deg dalam 7-10 minit, bergantung kepada size kertas cupcake anda.
Frosting(Untuk 12 cupcakes size sederhana)
Bahan-bahannya
3 biji putih telur
Icing sugar
secubit garam
1 sudu teh orange extract (untuk mengurangkan rasa manis pada frosting)Pewarna mengikut citarasa
Cara-caranya
1. Pukul putih telur sampai kaku (terbalikkan make sure confirm tak jatuh kat muka).
2. Masukkan gula sedikit sedikit, pukul lagi.
3. Akhir sekali masukkan sedikit garam, orange extract dan pewarna.
Nota: (Icing sugar ni saya letak cuma agak agak jer sebab tu tak letak sukatan.. maaf ye. Tapi selalunya 70% of the whole 500g packet)Tips:- Make sure biarkan frosting tu seketika dulu (dalam 5mins) sebelum kita pipe.. kalau tak nanti tak cantik frosting kita.- Kalau tak ada nozzle untuk ketatkan tip ngan piping bag, dulu saya ketatkan dengan menggunakan scotch tape.

pressure cooker chicken and mushroom
sementara masih rajin, tried using za's pressure cooker today with this dish. 35 mins from start to end. i know, it looks like kurma but next time i know to reduce the amount of water. tastes nice and creamy.
Pressure Cooker Chicken and Mushrooms
From Linda Larsen, This super simple, rich chicken entree recipe uses just six ingredients and cooks in minutes using your pressure cooker.
INGREDIENTS:
3 Tbsp. olive oil
2 lbs. boneless, skinless chicken breasts
1 tsp. salt
1/8 tsp. pepper
1 onion, chopped
8 oz. pkg. button mushrooms, cut in half
2 (10 oz.) cans cream of mushroom soup with roasted garlic
1/2 cup chicken broth
PREPARATION:
Add oil to pressure cooker and heat over medium-high heat or use brown function. Brown the chicken breasts, two at a time, on both sides. Remove browned pieces and add more, continuing until all breasts are browned.
Sprinkle chicken with salt.
Saute onion and mushrooms in drippings remaining in pressure cooker 3-5 minutes. Then return chicken to pressure cooker; add soup and broth and stir. Secure lid, bring up to high pressure, and cook for 15 minutes. Release pressure using natural release, about 30 minutes. Open lid, stir, and serve with hot cooked pasta or couscous. 4-6 servings

Oven-baked chicken with garlic and parmesan
Oven-baked chicken with garlic and parmesan
1 chicken – 8 parts
4 large clove garlic ]
1 teaspoon rock salt ] tumbuk
3 x size 2 eggs ]
black pepper ] whisk, add garlic puree and pour over chicken.
Marinate at least 4 hours
Preheat oven 350oF or 180oC
Pop in shallow roasting tin containing:
50 g butter
4 tblspoon olive oil
50 g fresh breadcrumbs ]
40g parmesan cheese, grated ]
2 heaped tablesppon finely chopped fresh parsley ]
seasoning ] mix and put on plate
(* had no parmesan so i used 3 slices of cheddar cheese - grinded sekali with 2 pieces of kepala roti that no one eats anyway). No parsley so i added some other spice for the colour.
remove chicken from fridge,
take one piece at a time
sit in crumb mixture, pat and coat with crumbs
add chicken pieces
bake on high shelf 20 min
turn and bake another 20 min (*for my oven i did 30 mins)
pour off excess fat, bake another 5 mins
drain and eat.
coleslaw from Hanieliza - cabbage + carrot + mayonnaise +lime juice +2 spoonful cold water.

Ayam Percik
Dear folks,Got this from Hanieliza fotopages. easy to do (dinner last night)- prepare chicken, blend all the stuff (do this finely kalautak the serai makes the kuah a bit 'berbulu'), put all in kuali, let the kuali be on the stove, then masuk oven in the last stages. ready to eat in about one hour. i reduced the cili to about 6.-8 since kids tak berapa gemar pedas. Ini sebab duk recommend Ja beli oven and termention ayam percik! Picture ni tak berapa menarik but the taste is yummy.
Bahan: 2 kg ayam [potong 4 keping] 3 cawan santan pekat [perah gunakan air kelapa dari 1 biji kelapa ] (I used 1 packet of instant santan)1/2 cawan air asam jawa 1 s/t gula 1 s/t halba garam secukup rasa bahan mesin halus 20 tangkai cili kering (used only about 6 for 1 ekor) 4 biji bawang putih 3 cm halia 5 batang serai Cara 1. Lumurkan sedikit garam dan tepung ubi kayu pada ayam dan bilas bagi menghilangkan bau hanyir. 2. Masak ayam dalam kuali bersama bahan mesin, santan, halba dan asam jawa sehingga sederhana masak (kuahnya tinggal sedikit). Tetapi pastikan segala rempah sebati dengan ayam. 3. Alihkan ayam ke ketuhar dan panggang pada suhu 200' C sehingga ayam masak dan berwarna perang keseluruhannya. [boleh juga panggangkan ayam menggunakan pemanggang ikan tu] 4. Hidangkan dan hiaskan dengan salad atau timun. NOTA: Boleh ditukarkan ayam kepada ikan tetapi ikan tu tak perlu direbus dgn santan...cuma masakkan bahan kuah sehingga pekat. Ikan tu dibakarkan dan percikkan kuah tu saja dan bila menghidang..curahkan kuah keatas ikan.

Mexican Chicken
Hi gals,Tried this recipe today - it's actually very nice (kids sapu habis) and easy to make (jenis campak2 and bake). Got it from a british cookbook - it also required tarragon vinegar and white wine which I conveniently omitted.
We had it with mashed potatoes and pasta salad.
75 gram butter
4 chicken joints
4 small whole onions
25 gram flour
2 tablespoon tomato puree
300 mls chicken stock
4 cloves
1 clove garlic, crushed
1 green pepper, deseeded and sliced
salt and pepper
100 g seedless raisins
12 stoned green olives (optional)
lightly fry the chicken in the melted buter
transfer to a large ovenproof casserole.
Toss the onion in the butter and add to chicken
Remove pan from heat, blend in the flour and then the puree, gradually add stock
Stir to keep free from lumps
Replace over heat, stir till thickened
Pour over chicken
Add cloves, garlic, pepper slices
Season with salt and pepper, cover, cook in moderate oven (180 deg c) for 1 to 1 ½ hours
Add raisins and olive for the last 15 mins
Serves 4

Lindek's Ayam Percik
Ingredients :
1.5 kg Chicken, cut into 6 pieces
100 ml Water
300 ml Thick coconut milk
50g Tamarind paste
Spices
6 Shallots
3 cloves Garlic
2cm Ginger piece
1 stalk Lemon grass
3 teaspoons Chili paste
1 teaspoon Cinnamon powder
Seasoning
2 teaspoons Salt or to taste
1/2 teaspoon Pepper
1/2 teaspoon Ground black pepper
Method :
Mix the tamarind paste with the 100 ml water and squeeze to obtain tamarind juice. Set aside.
Combine and ground the spice ingredients. Then add the tamarind juice and thick coconut milk.
Put the chicken pieces in a large mixing bowl.
Pour in the combined spices with coconut milk and tamarind juice before adding in the seasoning.
Mix well until the chicken is coated with the marinade.
Keep in the refrigerator for several hours or preferable overnight.
Remove and grill the marinated chicken pieces over a charcoal pit or bake in the oven until meat is cooked and slightly charred.

22nd Ramadhan
Today being saturday and the fact that I've submitted my report yesterday, I went on a cooking spree. Roast chicken - it's been de-legged but nonetheless.... easy one - clean chicken, sapu with garam and pepper (go under the skin) - inside put in 1/2 lemon and 1/2 garlic - (seketul besar tu slice horizontally with skin on)
, bake in preheated oven, on a rack on a pan around 180 - 200, put a piece of foil on top to cover. after about 30 - 45 mins depending on chicken size, remove foil, coat with honey, put under grill sekejap. We all kerjakan sampai tinggal tulang and it's really a no-fuss-chicken-roast.AND.... guess what???? First time buat laksa kelantan. tapi tak cukup ulam - tak kisahlah. others can correct me if i'm wrong - rebus ikan (i found mackerel at the market today
) with asam jawa, let cool. prepare kuah - blend bawang merah, lada hitam, halia, serai. boil santan in the air rebus ikan + asam jawa, add the blended stuff and ikan, stir, boil. garam, belacan, cili. Ulam can do with bunga kantan, kacang panjang etc.And then - apple cake. scrumptious. Fun for the kids too - they helped in preparing. Took us less than 1/2 hour to prepare just in time for buka puasa, then had it for dessert.
Apple cake (Betty Crocker’s) 14/10/06 .
1 ½ cups sugar
1 cup vegetable oil
3 large eggs
2 cups all purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon vanilla
½ teaspoon salt
3 cups chopped tart apples (3 medium)
1 cup coarsely chopped nuts
Cream cheese frosting (pg 111) if desired
Heat oven to 350.grease bottom and sides of rectangular pans, 13x9x2 inches, or 2 round pans, 8x1 ½ or 9x1 ½ inches, with Shortening, lightly flour
beat sugar, oil, eggs – low speed 30 seconds or till blended
add remaining ingredients expect carrot, nuts n frosting – beat low speed 1 min.
stir in carrots and nuts
put in pan
bake rectangle 40 – 45 mins, rounds 30 – 35 mins
cool rectangles in pan on wire racks; cool rounds 10 mins, rmove to wire rack. Cool completely 1 hour
apply frosting if desired

15th Ramadhan
We (Ami and us) had a scrumptious Indian meal just now - Tandoori chicken, pompadum + mango chutney + raitha (?spelling), fish curry, fried eggplants... siap try masala vadai which turned out fairly okay. The yellow drink you see is mango lassi - Mira's attempt .... sodap....
Tandoori chicken was from Chef Wan's book, fish curry was an attempt to follow Jamie Oliver's curry sauce, vadai came from our recipe book, lassi was from Hanieliza's website.
