Roti Bakar
It's true - grilling the bread over fire makes roti bakar much nicer compared to toasting in electric toaster. Grill, cut off sides, spread margarine and kaya, enjoy.
Cinnamon raisin bread
Bread is best done when you are not in a hurry. All in all, active efforts probably took 30 minutes, but I started the dough in the morning and only baked it just before dinner. Saturday, August 04, 2007
Brownies, Cheese twist
dear all, i think i've posted a recipe for brownies before, but i tried a new one last week - this one lagi cun and yummy. i doubled the recipe to fit ngam ngam a 10" square pan. ANd it doesn't take long to prepare.
And this morning did this feta and spinach twist - except that i didn't have feta cheese nor spinach, so it became cheddar twist. recipe as attached below.
Nut and chocolate chip brownies (The Great Big Cookie Book) – prep ½ hour. Double to fit square low pan.
150 g / 5 oz plain choc chopped
120 ml / ½ cup sunflower oil
1 ¼ cup light muscovado sugar
2 eggs
1 tsp vanilla essence
2/3 cup self-raising floor
4 tbsp cocoa powder
¾ cup chopped walnuts or pecans
4 tbsp milk chocolate chips
preheat oven to 180 deg celcius. Lightly grease a sallow 7 ½ in square cake tin.
melt plain choc in a heatproof bowl over a saucepan of hot water.
with an electric whick, beat oil, sugar, eggs, vanilla.
stir in melted chocolate, beat well till evenly mixed.
sift flour and cocoa powder into the bowl and fold in thoroughly.
stir in chopped nuts and chocolate chips, tip into prepared tin and spread evenly to the edges.
bake 30 – 35 minutes, until top is firm and crusty.
cool in tin before cutting into squares.
Feta and spinach twist (The bread book p57) – august 2007
475 g strong white flour
2 teaspoon sugar
1 ¼ teaspoon salt
1 ¼ teaspoon fast action dired yeast
2 tablespoon olive oil
275 ml water
250 g frozen spinach, defrosted
a little grated nutmeg
150 g feta cheese, well drained
50 g pine nuts
1 egg yolk, to glaze
salt and freshly gournd black pepper
put flour, sugar, salt into bowl. Add olive oil, gradually mix in enough warm water to make a soft dough.
knead well – 5 mins. Put dough in bowl and cover loosely with oiled clingfilm. Warm place, rise 1 hour.
tip dough onto lightly floured surface, knead well, roll out 15 x 13 in. rectangle. Sprinkle spinach over dough, seaon with salt, pepper, nutgme. Crumble over feta cheese, scatter nuts.
roll out dough from the longest edge. Brush dough with egg yolk + 1 tablespoon water.
cut dough lengthways in half, open out so that cut sides are uppermost, press ends toether. Loosely twist right over left. Transfer onto greased baking sheet. Leave to rise uncoveredc 20 – 30 mins.
bake in preheated overn 200 deg celcius fo r20 -25 mins until golden and sounds hollow when tapped. Check after 10 mins and cover with foil if overbrowning.

muffin stew buns
Banana muffin (betty crocker – easy to do and nice esp when hot)
1/3 cup milk
¼ cup vegetable oil
1 large egg
2 cups all purpose flour (if use self-raising f, omit b powder and salt)
½ cup packed brown sugar
2 teaspoon baking powder
½ teaspoon salt
1 cup mashed very ripe banana (2 medium)
heat oven to 400
grease bottoms only of 12 medium muffin cups or line with paper baking cups
beat milk, oil, egg
stir flour, sugar, b powder, salt all at once just until flour is moistened (batter will be lumpy)
fold in bananas
divide into cups; sprinkle each with about 1 tablespoon topping.
bake 20 to 25 minutes or till golden brown
when done, immediately remove from pan to wire rack
streusel topping
¼ cup all purpose flour
¼ cup packed brown sugar
¼ teaspoon ground cinnamon
2 tablespoon firm butter or stick margarine
mix flour, brown sugar and cinnamon
cut in butter using pastry blender or crisscrossing 2 knives until crumbly
Chicken mushroom stew tarbus version
Made a simple and tasty chicken stew with the pressure cooker. Am better at it now - no need to add so much water, just enough to cover the meat.
tumis bawang (m + p)
add hard veggies (ie carrots, sweet potatoes - diced)
add chicken - i used one whole cut into 8
add mushrooms (i used oyster mushroom - if that is what it is called)
add bit of Mik's rempah kari udang cap tarbus (1/2 packet)
season with salt, pepper.
add enough water to cover
cook about 15 mins.
Buns
I used sweet bun recipe (hanieliza) to make these - one was with mushroom filling (i'm mushroom crazy now) and the other plain sprinkled with sesame seeds.

Sausage Rolls and Nasi Goreng Cina
Okay, so i found out that i can make this without my bread maker ('can' meaning it's a good workout!). appearance - hmmm, boleh diperbaiki but taste is there.
SWEET BUN for sausage rolls
Ingredient A :
500g high protein flour
25g milk powder
75g sugar (I lessen it to just 50g since I want to make sausage rolls)
10g instant yeast
1 teaspoon bread softener
1 egg
1/2 teaspoon salt
Ingredient B :
250ml water
75g margarine
Ingredient C :
Red bean filling
Butter
Sugar
Sausage
Raisins/sultanas
Method :
1. Mix well ingredients A.
2. Add in water and knead till a soft dough is formed.(I called upon my antique but still reliable mixer to help me with this process!)
3. Add in margarine and knead again till soft and elastic.
4. Divide the dough into 50g balls.
5. Shape the dough to your liking.
6. Leave to prove till double the size.
7. Bake in a preheated oven at 180 degree celcius till golden brown.
8. Once out of the oven, brush some margarine on top.
Then today for lunch, kelaparan, since ada rice, tried this recipe - i know there are 1000 and 1 ways to make nasi goreng but i followed this to see the effects of ginger and oyster sauce. Comment from my sister -hmmm, sedap!
Chinese fried rice (Zack fotopages)
Ingredients:
2 cups white rice
6-8 shrimps
1/2 of 1 chicken breast, diced
2 cloves garlic, finely minced
1/2 green onion, minced
1 tsp minced ginger
mix veggie
2-3 eggs
2 tbsp oyster sauce
2 tbsp spring onions
2 tbsp fried shallots (bwg goreng)
2 tbsp veggie oil + 1 tbsp sesame oil salt,
white & black pepper,
sugar to season
How to make:
1. Prepare all the ingredients; Have them placed in bowl along with the seasonings; oyster sauce, salt, sugar and pepper. Make sure that everything is within your hands reach because you'll be cooking very fast, so you won't have time to run to the sink or table for the ingredients.
2. Heat up the wok, put in the oil and check to make sure that the wok is really hot by sprinkle a little bit of water to the side of the wok and it should steam up very quickly.
3. Pour in onions, garlic, chicken and shrimps. Stir quickly followed by the oyster sauce and mix veggie. Pour in the rice mixed with eggs ( see the TIPS picture above ) and stir fry quickly. Use a big spatula is you need to. It sure helps sometimes
4. Lastly add in the spring onions, fried shallots and season with enough salt, sugar and pepper of your liking.

ban kelapa
Yesterday made ketayap for Mira's class party, and had leftover coconut filling. So today made some buns - was quite surprised that they taste nice! Coconut filling was easy to do - dessicated coconut (well, mana ada fresh grated coconut), brown sugar, bit of water - mix all in pot and stir till sugar dissolves. I suppose if I had daun pandan it would taste nicer. Nice eaten for morning break with a cup of hot coffee... bila otak dah bengang...

Shina's Cheesebuns

Decided to try making these cheese bun in a different bekas - so they expanded vertically since no space to go horizontally. Got this from mamafami cheesebun recipes. Had no grated cheese so slice cheese had to do (which, I discovered, is difficult to grate - it's lembiker than that solid block of cheese). Rating - thumbs up from the kids.With the breadmaker doing most of the work, I only had to put the mix into the breadpan, prepare the bekas, cut the dough into those ball shapes, and spread with milk/cheese. Baking time only 15 mins.

saturday nov 11th
Made Lala's cheesecake but it was only after we ate 3/4 of it that i remembered to take pics! Tonight we had a mat salleh dinner - cod, potatoes and beans. Plus i tried these buns i got from resipidiana.blogspot - superb.
Mixed fruit bun (resipidiana.blogspot.com)
A - mix all
350 gram bread flour
150 gram superfine flour (I used all bread flour)
100 gram sugar
1 teaspoon salt
30 gram milk powder
1 teaspoon bread improver (optional)
1 teaspoon bread softener (optional)
4 teaspoon dried yeast
B
Water
1 small egg – beat a bit
(mix till get 265 mls)
C
40 gram butter
40 gram shortening (or either one both)
add B to A and mix well
add C and knead till doesn’t stick to fingers
prove 30 – 40 mins
beat once
divide into 200 gram and add 50 grams of mixed fruit/raisin into each 200 gram dough;
make into balls
leave 30 – 40 mins
Roll dough thinly,
Cut strips with sharp knife dipped into flour onto one side
Roll from uncut side
Leave 30 mins
Brush with egg + fresh milk mixture
Oven – preheated 180 deg, for 20 mins

the smaller cut one was supposed to be red bean stollen, but had no red beans but used choc nutella - same princip of making it.

hot cross buns
This morning i tried this. easy (with breakmaker which did all the uli uli work) and nice to eat when hot. bila sejuk tak sedap sangat.recipe to follow later.

Hot cross buns (The bread book)
500 gram strong white flour (I used bread flour)
3 tablespoon butter
3 tablespoon caster sugar
1 teaspoon salt
1 teaspoon ground cinnamon
¼ teaspoon ground allspice
¼ teaspoon grated nutmeg
1½ teaspoon fast=action dried yeast
1 egg , beaten
275 mls milk
125 raisins
for the crosses
125 gram strong white or plain flour
8 – 9 tablespoon water
to glaze
4 tablespoon milk
2 tablespoon caster sugar
with breadmaker – milk, egg, sugar, butter,flour, salt, spices, yeast set.
Tip onto lightly floured surface, knead well.
Cut into 12 even pieces, shape into balls. Put buns spaced well apart on to greased baking sheet.Cover loosely with oiled clingfilm, leave in warm place to rise 30 mins
Sift flour for crosses into small blow, gradually mix water to make smooth paste. Spoon onto piping bag – pipe crosses over buns, bake in preheated oven 200 deg c, 15 mins till golden brown.
Meanwhile put milk + sugar into small saucepan, heat gently till sugar dissolve, boil 2 – 3 mins till syrupy, brush hot glaze over buns.
Allow 5 mins, transfer onto wire rack to cool.
