creme caramel


this is an easy and yummy recipe! Got it from Ida who got it from Kak Eida Hamzah

Crème Caramel

For the custard:

3 large eggs
2 egg yolks
3 oz (75gms) caster sugar
Pinch of salt
500 ml fresh milk
1 can evaporated milk
1 ½ teaspoon vanilla essence
Butter for greasing (optional)

For the caramel:

100gms sugar

Method:

Preheat the oven to 160ºC. Pour about 1 inch of hot water into a roasting tin large enough to hold a custard mould. Place this tin in the oven.

Put the eggs and egg yolks into a bowl. Beat them lightly, but not to a froth. Add the sugar and salt and mix in. Heat the evaporated milk and fresh milk in a pot until it is very hot. Slowly pour the hot milk into the bowl with the eggs, whisking vigorously, add the vanilla and mix it in.

Grease the custard mould with butter. Put the sugar for the caramel in a heavy based frying pan, spreading it over the bottom. Heat it over a medium heat. Do not stir. As the sugar melts and turns brown, tilt the pan around so that the sugar moves a little. When all the sugar has caramelized, pour it into the custard mould. Tilt the mould around so that the sides are coated. The sugar will harden. Strain the hot custard into the mould and place the mould in the roasting tin of water. Cook in the oven for 1 hour or 1 hour 10 minutes. Let the custard cool before putting it in the fridge. Invert the custard.

Puding jagung

Super easy (only 1 pot, 1 senduk, 1 measuring cup!) and sedap-dimakan puding jagung!

1 cup tepung kastad
1 tin susu cair
1 cup gula halus
2 tblspoon margerine
4 cups water
1 can of corn

Put all ingredients in pot. Heat and stir until 'naik wap and berkilat' (quote recipe book 1Hari1recipe by hanieliza). Pour into bekas. Allow to cool. Cut. Eat. (*Note: 1 cup of sugar was not over-sweet, just nice)

Ayam berempah

I have discovered a memang-jadi recipe book .. 1hari1resipi by hanieliza. simple instructions, and outcome is yummy. Modified this one. Supposed to be fried but i grilled it in the oven, 200 degrees for 30 mins. marinated with serai (3), halia (1in), b putih (3), serbuk kari (1 st), lada sulah (1 st), garam secukup rasa, serbuk cili (1 st), daun kari. Well, this being Ramadhan I don' t know how it tastes yet, but this came out fresh from the oven and looks very inviting!

Serimuka durian


I saw a picture of this in someone's FB wall and it looked so delicious. Found the recipe in Buku resipi 1Hari 1Resipi (Hanieliza) and tried it. The recipe works!

Bahan A (lapisan bawah)

2 cawan beras pulut

2 cawan santan cair (1 box of instant santan + water)

½ sudu the garam

Bahan B (Lapisan atas)

2 cawan santan pekat

1 cawan gula perang

5 ulas durian

½ cawan tepung gandum

½ cawan teung jagung

1 tea spoon gula pasir (jika perlu *Didn’t use)

½ teaspoon garam

Bahan A

  1. Wash and soak pulut for a few hours.
  2. Add all bahan pulut into Loyang and kukus till cooked.
  3. Sapu a bit of oil into a different lyang and press the cooked pulut into it.

Bahan B

  1. Blend santan pekat, gula perang and durian.
  2. Sieve both tepung into the blended mixture.
  3. Add sugar and salt. Mix well.
  4. Heat in non stick pan until ‘naik wap’
  5. Pour Bahan B onto pulut, steam for 30 minutes (medium fire).
  6. When cooked, cool for 4 -5 hours. Cut and serve.

Blueberry cheesecake (2011) – nice and easy

1 ½ cup digestives + 1/3 cup butter – mix and put as base; bake 150 degrees for few minutes

Cream 500 gm cream cheese

Add ½ cup sugar (plus minus – add more if you want sweeter)

Beat well.

Add 2 eggs + 1 teaspoon vanilla

Pour onto base

Bake 180 degrees for 20 mins.

Cool. Pour blueberries over. Chill. Eat.

Salmon + pasta



If you want a dish that is quick and easy yet yummy, this is one. Grilled salmon + pasta + some greenish stuff, in this case it was rockets. While grilling salmon (coated with a bit of olive oil + salt + black pepper) just pop red chillies as well. They are not as hot when grilled. Pasta was tossed with a bit of olive oil + salt + pepper + whatever else you are in the mood for :)

Rainbow Buttercake




This is another of Mamafami's recipes that works. It is not as complicated as it looks, and tastes superb. Highly recommended if you are in the mood to bake and eat. In our case, didn't even wait for the cake to be lifted up from the baking pan onto the cooling rack. It was simply take out from oven, cut and eat!

250g butter
200g sugar
5 eggs
210g flour
1/2 teaspoon baking powder
1 teaspoon vanilla essence
1/2 teaspoon rose essence
food colouring : pink, yellow, green, blue

Method :

1. Sift flour and baing powder, trice. Set aside.
2. Cream butter and sugar till light and fluffy.
3. Add in eggs, one at a time and mix evenly.
4. Add vanilla essence + rose essence

5. Cream batter till smooth and light.
5. Fold in the flour.
6. Scoop a small portion of the batter into 4 separate bowls.
7. Add in a bit of food colouring into each bowls. Fold in to mix it evenly.
8. Scoop 2 tablespoons of yellow colour onto the center of the baking tin.
9. Top it with 2 tablespoons of pink colour onto the center of the yellow batter.
10. Do the same with the green and blue colour and repeat the process till all the batter are used.
11. Bake in a preheated oven at 180 C for 45 to 50 minutes.

Banana loaf

Long CNY break - excellent time to try out a new recipe. Did this banana loaf using the recipe from Amy Beh's column in the STAR. Easy to do and yummy to eat. I loved the almonds especially. The recipe was tripled to get 2 loaves of this size, with baking time taking almost an hour.

Recipe for mini loaves:

50 g butter

60 g canola / sunflower oil

105 g soft brown sugar

2 eggs

½ teaspoon vanilla essence

150 g banana, mashed (3 – 4)

20 g ground almonds

200 g superfine flour

¾ tsp baing powder

¼ tsp bicarbonate of soda

30 g sultanans

2 tbsp milk

  1. preheat oven 170 degrees celceus
  2. beat butter + oil + sugar + essence until creamy
  3. add eggs one at a time, beat well after each addition
  4. mix in mashed banbas + ground almonds + sultanas
  5. sift in flour, baking powder and bicarbonate to combine; add in milk but do not overmix
  6. spoon mixture into loave pans until ¾ fulls.
  7. garnish with almond flakes
  8. bake 20 – 25 mins
