And since you don't need butter (which needs to be softened in some recipes) then it's do-able as a emergency snack.
Apple muffin (?source) march 2007
1 ¼ cup flour
1 teaspoon bicarbonate of soda
½ teaspoon baking powder
½ teaspoon ground cinnamon
1 teaspoon vanilla extract
pinch of salt
2 granny smith apples diced
½ cup sugar
½ cup oil
1 egg
½ cup groundnuts = fried without oil, crushed
½ orang – extract juice and finely grate rind
preheat oven 180 deg
sift flour, bpwder, bicarb, g cinnamon, salt
in a separate bowl whisk eggs, sugar, oil till well combined. Add vanilla, orange juice and rind
pour mixture into dry ingredients, along with apples and nuts (I didn’t use nuts). Mix with whisk just till well incorporated. Do not over mix
spoon mixture into muffin paper cups
bake 12 – 15 mins

oh yummy apple muffins. i think you were the one hari tu in the email yg kata the secret to making good muffins is not to over mix, right? i'm going to try this (yeah right!) with bananas and choc chips! my two favourite ingredients...
